As a total amateur to cooking, I picked up basic cooking whilst watching youtube videos after my wedding as it is impossible for me to eat outside food / rely on my mom to cook my meals on a daily basis. Eating home-cooked food is a much healthier and affordable option as compared to eating out.
Hence I was really glad when Toast Box decided to send me their new Asian Delights Ready-to-cook Pastes for me to experiment with 😀

In a bid to celebrate #SG50, Toast Box has launched their Asian Delights Ready-to-cook pastes in 4 flavours – Mee Rebus, Mee Siam, Curry Chicken and Singapore Laksa. This might be a good news to those who are desperately looking for cooking cheats / hacks or residing abroad and wanted to have a taste of home.
Each packet is retailing only at SGD6.50, except for the Mee Rebus @ SGD6.80.
They are readily available at Toast Box outlets island wide except Queenstown MRT and Wisma Atria B1.

I choose to attempt making Mee Siam with the ready-to-cook paste as the instructions seemed to be fairly simple.
Mee Siam is one of our local delights and is also of a Malay origin. It consists of Vermicelli served with spicy, sweet and sour light gravy made from a rempah spice paste, tamarind and salted soy bean. Mee Siam is usually garnished with bean sprouts, garlic chives, and lime wedges.
Before making my Mee Siam, I went to GIANT Supermart for some grocery shopping 🙂

According to the package insert, the additional ingredients needed are:
1. Bean Sprouts 40g
2. Dried Beancurd 1pc
3. Fresh Prawn 3 pcs
4. Fresh Beancurd 1pc
5. Hard Boild Eggs 2pcs
6. Tomatoes 2 pcs
7. Calamansi 2 pcs
8. Chives half stalk
I did not stick to the instructions fully as I dislike Prawns and Dried Beancurd.
Hence below are the ingredients I bought from GIANT to be used to make my version of Mee Siam 🙂

I opted for Brown Rice Vermicelli as I feel that it is a healthier variation to the usual rice vermicelli we normally eat. Also, I love eating silky tofus and hence I will be using Unicurd’s Silken Tofu 😀

Video Tutorial

To cut the long story short, you may watch my video tutorial below 🙂

Steps:

1. Pre-soak Rice Vermicelli in Warm Water
2. Wash vegetables – I’m using a Veggie Wash in order to wash off any pesticides / wax coated on my veggies. You can purchase the wash from Cold Storage.
3. Mix a packet of the Ready-to-cook Mee Siam Paste with 600g water and 2 sliced tomatoes and stir continuously until boil. I added my diced tofus and finely chopped chives to the boiling mixture afterwards 🙂
4. Strain the vermicelli as they would’ve softened at this stage.
5. Remove the top layer oil from the boiled Mee Siam paste mixture earlier and place it into a frying pan.
6. Stir-fry vermicelli with the top layer oil extracted earlier.
7. Serve your Mee Siam with the remaining gravy together with limes and hard-boiled eggs

Review

We both felt that the paste lacked the spicy taste but it is indeed sour enough for Mee Siam.
I had a sense of achievement that I can actually cooked Mee Siam on my own so effortlessly (with the help of Toast Box Mee Siam paste of course)!
